Cream of Cauliflower soup

1 head of cauliflower, cut into small florets
1 potato, peeled and diced
1 1/2 C milk
2 C chicken or vegetable broth
1 onion, chopped
2 Tbs butter
salt & pepper to taste

Melt the butter in a medium pot. Saute onion for 5 minutes. Add cauliflower and potato and saute for another 5 minutes. Add chicken or vegetable broth and bring to a boil. Reduce heat to low and simmer for 20 minutes. Add milk, stirring well to mix. Take about two and a half cups out of the pot and put into blender. Blend until creamy! :) Add back into pot. I actually had to add some corn starch to thicken it up at this point. Easy! Just put about a Tbs of corn starch in a bowl, add water and mix well. Pour into soup and bring to a boil. Reduce heat and it should thicken up! Or, when you put your milk in, you can add a half a cup of whipping cream and that should do. I put about a half of a teaspoon salt and pepper. I also sprinkled some nutmeg for flavor. :) Dish, sprinkle some cheese and a little extra pepper, and enjoy! MMM MMM MMM!
